How We Ate It

    We Three Greens have been eating awesome this past week because we need to consume all the produce we bought before it goes bad.  Also, my extended family got in on the vegetable madness. Both my parents and my brother & sister-in-law got the 10 dollar mix-and-match bags and we reaped the benefits yesterday for Sunday dinner.  I wish I had taken a picture of the huge, beautiful batch of fresh guacamole Ben and Ashley made and the Mango Lime Ice Cream we ate.  Oh my, I love me some summer food.
   Le Stuffed Bell Peppers
Preheat oven to 350 degrees. Cut and gut three bell peppers. I cut them into tulips for some finesse, and saved those pieces to add to the filling.
Then prepare the filling.  I used an adaption of my mom's meat loaf recipe (because its r'll good).  You could add some cooked rice or mushrooms as well to make it more hearty.
  • 3 hamburger patties, thawed
  • 1 chopped green onion
  • 1/2 sleeve of crushed Saltine crackers
  • 1/2 cup of chopped bell peppers 
  • 1/2 cup ketchup
  • 2 eggs
  • 1 Tablespoon of Worcestershire Sauce                                                                                                      Then I added a dash of these spices (I usually don't use exact measurements)                       
 
  •      Pepper, Garlic & Pepper, Seasoned Salt, Cayenne, and Parsley                                                              
     Squish it all up with your hands, and separate into portions for each Bell Pepper.    
    Wash your contaminated hands or you're gross. Add a spoonful of olive oil to the bottom of each bell pepper, and spoon into each bell pepper.  Place in a casserole dish filled with about 1/2 cup of water, and cook face-up and uncovered for 40 to 50 minutes.
    I added this last step because cheese is always welcomed at my residence. Add cheese on top (I put two slices of Pepper Jack for Brian and 2 slices of Swiss for me) and cook for another 5 to 10 minutes until melted.
    The Final Product Was Sooooo Goood.  Unfortunately, I won't be making it again for awhile because it made Le Baby quite fussy.  But try it if you're not breastfeeding:)
    Him liked it.
